Baked Feta Pasta (Viral TikTok Recipe)

Ingredients:
• 8 oz feta cheese (block)
• 16 oz cherry or grape tomatoes
• 1/2 yellow onion, chopped
• 5–6 garlic cloves, minced
• 1/2 cup olive oil (reserve 1–2 tbsp)
• 1/2 tsp dried basil
• 1/2 tsp dried oregano
• 1/2 tsp red pepper flakes (adjust to taste)
• 1/2 tsp coarse black pepper
• 8–16 oz pasta of choice (use less pasta for extra creamy sauce)
• 1/4 cup chopped fresh basil or parsley (optional)
• Mozzarella & Parmesan cheese for topping (optional)
DIRECTIONS:
Preheat oven to 450°F
In a baking dish, combine tomatoes, chopped onion, garlic, dried basil, oregano, red pepper flakes, black pepper, and most of the olive oil. Toss well.
Place the block of feta cheese in the center of the dish. Drizzle with the remaining olive oil.
Bake uncovered for 25–35 minutes, until tomatoes are soft, blistered, and slightly golden, and feta is warm and creamy.
While baking, bring a large pot of salted water to a boil and cook pasta according to package directions.
Reserve 1 cup pasta water, then drain pasta.
Mash the baked feta and tomatoes into a creamy sauce. Add drained pasta and stir until evenly coated.
If sauce feels thick, add a splash of reserved pasta water.
Stir in fresh basil or parsley if using.
Top with mozzarella and Parmesan (optional) and serve warm.

• For extra creamy pasta, use 2 blocks of feta.
• Use less pasta for a richer, thicker sauce.
• Add grilled chicken or shrimp for protein.
