Easy Microwave Lemon & Lime Curd
This easy Microwave Lemon & Lime Curd is smooth, tangy, and perfectly sweet, made in just minutes with simple ingredients. Perfect for spreading, filling, or topping desserts, this quick citrus curd recipe is a must-have for lemon and lime lovers.

Servings: 1½-2 cups
Ingredients:
• 1/2 cup Butter, melted and slightly cooled
• 1 cup Granulated Sugar
• 3 large Eggs
• 1 large Egg Yolk
• 1 cup Freshly Squeezed Lemon Juice or Lime Juice (you will need more limes then lemons)
• Zest of 1 Lemon or Lime
Directions:
1. Add all your ingredients to a large mixing bowl and whisk very well.
2. Store in an airtight container for 6–8 months.
DIRECTIONS:
1. In a large microwave-safe bowl (you will need a large bowl), whisk together the melted butter and granulated sugar.
2. Add the egg yolk and eggs, and mix until well combined, then add the lemon juice and zest and mix until fully combined.
3. Microwave on high in 1-minute increments, making sure to remove the curd from the microwave and mix well after each increment. The lemon curd is done once it coats the back of a spoon, it usually takes about 5 minutes. Yours may take a little more or a little less time.
4. Remove from the microwave and pour the curd through a fine mesh strainer into a clean, heat-safe container.
5. Place a piece of plastic wrap directly on top and allow to cool completely. Then pour into a sealable jar and refrigerate until ready to use.

💡 Notes:
• Microwave in short intervals and stir well each time to prevent scrambling the eggs
• Curd is ready when it thickens and coats the back of a spoon
• Straining the curd gives you a smoother, creamier texture
• Lemon will be slightly more tart, lime will be a bit sweeter and brighter
• You can adjust sweetness by adding a little more or less sugar to taste
• If curd seems thin, it will thicken more as it cools
