Ham, Onion, and Spinach Quiche

I don't know about your family, but my family loves quiche. They routinely ask for it for dinner. What's great is leftovers can also be heated up for breakfast! Who doesn't love that?!
This is a pretty simple quiche to make, the longest part is the baking. At least you can do something else during this time!
This is our go to recipe for quiche, but we also like to switch out the ham for bacon sometimes. Because who doesn't love bacon?
I definitely recommend slowly caramelizing the onions slowly and then adding the ham towards the end. That way everything is nice and brown. It just adds so much flavor. If you are using bacon instead of ham, you need to cook the bacon before adding to the mixture. No need to add to the onions.
I normally use one of my homemade pie crusts, but I have been in a pinch and used a store bought pie crust. Hey we've all been in a pinch!
We tend to use a lot of cheese, because in this house we love cheese. We might even be little cheese obsessed 😋!

This is a pretty simple quiche recipe, the most time is spent in the oven. We like to swap out the ham for bacon sometimes, always just a delicious. Feel free to swap the meat out and try some other flavors! Enjoy!
Ingredients

1 medium Onion

3 tablespoons Butter
-
1/2 lb. Ham Slice

8 whole large Eggs
-
1 ½ cup Heavy Cream
-
½ cup Spinach
-
2 cups Cheddar Cheese, separated

Salt and Pepper to taste

1 Pie Crust
Directions
Dice onion.
Melt butter in large skillet over medium low heat.
Add onions to melted butter, cook, stirring occasionally, until deep golden brown. Set aside.
Dice Ham.
Preheat oven to 400°.
Whips eggs, cream, salt, and pepper in large bowl.
Add in ham, onions, spinach, and 1 ¾ cups of the cheddar cheese, stir to mix.
Place pie crust in pie dish or springform pan. Place dish on rimmed baking sheet.
Pour mixture into pie crust, sprinkle remaining cheese on top of mixture.
Cover lightly with aluminum foil and bake for 50 minutes.
Remove foil and cook additional 10-15 minutes, or until the quiche is is set (not jiggly in the middle) and crust is golden brown.
Allow to cool 10-15 mintues. Then slice and enjoy!
Recipe Note
If using bacon instead of ham, make sure to cook the bacon first.
